Banyuls
Within proximity to Spain, Banyuls are exclusively dessert wines, for which fermentation is stopped by adding neutral alcohol. They retain residual sugars that give them a certain boldness blended with sweetness.Traditional Banyuls are aged in an oxidizing manner: the brick color evolves into brown or orange highlights and the aromas are dominated by notes of honey, candied fruits, hazelnut and tobacco.
The Banyuls known as “Rimage” are aged in an oxygen-free environment in order to preserve their freshness, their structure and the concentration of their fruit aromas.
Grand Cru Banyuls must specifically contain a minimum of 75% Grenache Noir and be aged in wooden barrels for a minimum of 30 months in an oxygen-free environment.
Their powerful aromas are reminiscent of dried fruits, prunes, sweet spices and cocoa.
